Store in a cool, dry place. Refrigerated shelf life after opening: 5 days. This product can be frozen.
DUKAN MERINGUES
70g egg white
2 tablespoons of Zùsto sweetener crushed to a fine powder
a few drops of lemon juice or vanilla flavouring and powdered food colouring if desired
Whip the egg whites until stiff for no less than 10 minutes.
Then incorporate the powdered Zùsto half at a time, mixing from the bottom upwards.
Flavour with lemon or vanilla or add food colouring if desired.
Use a spoon or a pastry bag to form meringues on a baking tray.
Bake (static oven) 20 minutes at 100°, then lower to 90°. Bake for 1½ hours. Check from time to time, if there are any cracks it means the oven is too high, so lower the temperature to 80 – 85°.
After 1½ hours, insert 1 wooden spoon into the oven door so that an air gap remains and continue baking for another hour.
After this time has elapsed, turn the oven off and leave the meringues in the oven with the wooden spoon leaving the gap for 5 – 6 h, even overnight.
