THE THOUSAND SEDUCTIONS OF KONJAC
In the beginning was konjac, the first generation, the wild one, redoubtable in its effectiveness but arriving from China in its water pack, its translucent whiteness and its natural but sometimes annoying smell.
I was the first to introduce this konjac to supermarkets.
But when I realized that, as it stood, it would remain the preserve of overweight fighters and could never become a staple food like pasta and rice, I decided to work on giving it the means to do so. I’m convinced that if this happens, overweight and obesity will have nothing to fear.
To this end, I filed a manufacturing patent for the product, which involves special cooking, adding oat fiber and molding rice and pasta to modify their texture, color and smell.
This metamorphosis took place in France.
I handed over the reins to cooks in French semi-artisanal companies to introduce pasta and rice in the most classic recipes for access by the general public. That’s where my ambition lies: to put konjac pasta and rice in competition with pasta and rice, which were a blessing when famine was killing.
Today, the opposite is true, and it’s abundance that kills, and among the abundance, pasta and rice are at the top of the list.
